My grandpa(age86) always shuts the gas off on his old tractors, and my dad was taught the same thing. Now me & my dad are wondering do we really need to do that. Where does this idea come from?

Mustang Girl is almost there. It probably is 6 Volt, positive ground. If it has a battery, you will know if 6 or 12 volt. if not, look for a ballast resistor on the firewall. That would be in-line between the starter solenoid and the ignition switch or coil, to reduce voltage if changed to 12 volt negative ground.

Some farm implements require you to drive very slowly yet with high engine revolutions per minute in order to have the PTO shaft spin at the proper rpm needed to drive the implements mechanism at the desired speed.
