My grandpa(age86) always shuts the gas off on his old tractors, and my dad was taught the same thing. Now me & my dad are wondering do we really need to do that. Where does this idea come from?

it can make starting very hard if the gas has flooded the carb.

Mustang Girl is almost there. It probably is 6 Volt, positive ground. If it has a battery, you will know if 6 or 12 volt. if not, look for a ballast resistor on the firewall. That would be in-line between the starter solenoid and the ignition switch or coil, to reduce voltage if changed to 12 volt negative ground.

The more work it needs the better.

Can a 3 point hitch be put on a farmall 140 tractor and keep the orginal fasthitch on it………

Yes you can do that. On your fast hitch where it would hook to your plow or whatever you are using they make 2 arms that slide in there for a three point hitch and there should be a place behind your seat for your turn buckle to hook up to.
